Animal-free food hacks can be simple and easy. All it takes is a little research. If you’ve ever gotten discouraged trying to remove animal products from your diet, you won’t be with these blueberry muffins! Here are the details:

Eggs: I’ve learned that milled flaxseed can replace a traditional egg in some recipes and an egg replacer works for almost all other baked goods. Similar to an egg, both act as binding agents. I’ve made blueberry muffins with milled flaxseeds and egg replacers, and both work great.

Oil: There’s nothing wrong with oils if you don’t mind the calories and fat. I prefer to cut some of that with natural options so I use unsweetened applesauce to keep my desserts moist. I opt for an unsweetened option because most regular brands sweeten their products with high-fructose corn syrup. That’s a no-no in my book so natural applesauce it is.

One last thing, make sure any boxed muffin mix you choose doesn’t have milk as an ingredient.
