Flavorful Vegan Cauliflower Tacos

I love tacos AND would probably eat them every day if I could. When I was in Miami a few years ago, I had some of the most flavorful tacos in my life, and they were crispy cauliflower with guacamole and General Tso’s sauce. They were so delicious that I was determined to make them at home. MISSION ACCOMPLISHED! They are so good and I even made my own General Tso’s sauce (to cut the soy). Try them tonight!

Vegan General Tso’s Cauliflower Tacos

Prep Time: 10 minutes | Cook Time: 45 minutes | Servings: 4

Cauliflower:

  • 3/4 cup all-purpose flour
  • 3/4 cup unsweetened almond milk
  • 3/4 cup panko breadcrumbs
  • Dash of salt
  • Dash of black pepper
  • 1/2 head of cauliflower

General Tso’s sauce:

  • 1 tablespoon sesame oil
  • 2 teaspoons of minced garlic
  • 1 teaspoon chopped ginger
  • 1 tablespoon tomato paste
  • 1/4 cup brown sugar
  • 1/4 cup rice vinegar
  • 1/4 cup coconut aminos
  • 1/2 cup vegetable broth
  • 2 tablespoons cornstarch
  • 2 tablespoons of water
  • Dash of salt
  • Dash of black pepper

Guacamole:

  • 2 ripe avocados
  • 1/4 diced tomato
  • 1/4 diced onion
  • 1 teaspoon of minced garlic
  • 1-2 teaspoons of lime juice
  • Dash of salt
  • Dash of cumin
  • Dash of crushed red pepper
  • Sprinkle of cilantro

Tacos:

  • Soft taco shells
  • Cabbage mix (Optional: You can make coleslaw with vegan mayo, apple cider vinegar, sugar, salt, and pepper)
  1. Heat the oven to 350 °F.
  2. In a bowl, combine the flour, the almond milk, and salt and pepper. Pour the panko breadcrumbs on to a flat plate.
  3. Cut the cauliflower into bite-sized florets. Dip the florets into the batter, so they’re completely coated. Then roll them in the panko breadcrumbs.
  4. Line a baking sheet with parchment paper and lay the cauliflower florets on the baking sheet. Don’t put them on top of each other. Bake for 25 minutes.
  5. General Tso’s sauce: Add two tablespoons of water to the cornstarch, stir well and set aside.
  6. In a small saucepan, heat the sesame oil and sauté the garlic until it becomes lightly brown. Then add the ginger, sugar and tomato paste, and cook for one minute.
  7. Then add the remaining ingredients, including the cornstarch and water mixture. Cook for an additional five minutes until the sauce thickens.
  8. Remove crispy cauliflower from oven and coat with warm sauce.
  9. Guacamole: smash avocado and mix all ingredients. Season to taste.
  10. Spread guacamole to soft taco shells then add cabbage mix. And finally, top with General Tso’s cauliflower.
