Breakfast can be made simple. Your first meal of the day should be light, yet filling and delicious. This plant-based yogurt parfait is just that.
Traditionally, breakfast breaks your fast after a long night’s sleep. Some people eat it first thing in the morning, while others wait until they get hungry. Whenever you decide to enjoy breakfast, it’s best to do it with nutritious food that will give you the best start to your day.
Plant-based yogurt, or nut yogurt, is an excellent alternative to dairy yogurt. A few options include almond, cashew, coconut, and oat yogurt–and some even contain live probiotic cultures. There are plain, sweetened, and fruit flavors.
Fresh fruit is refreshing, delicious, and full of health benefits. From antioxidants to vitamins and minerals, you can’t go wrong with any fruit additions. My favorites are bananas, blueberries, and strawberries.
Baked rolled oats, nuts or seeds, dried fruit, and a sweetener such as honey or maple syrup make granola. This combination’s nutrients include dietary fiber and a host of vitamins and minerals.
Chia seeds are a great addition at breakfast time and are easy to sprinkle on any recipe. They also contain dietary fiber and omega-3 fatty acids.

Vegan Yogurt Parfait with fruit and granola
– 1 cup of plant-based yogurt
– 1 cup of fruit
– ¼ cup of granola
– OPTIONAL: ½ teaspoon of chia seeds
1. In a bowl, add the yogurt, then top and arrange granola, fruit, and chia seeds.
